Cooked Greens with bacon and Vinegar
• 10 cups fresh
greens
(spinach,
mustard greens,
Swiss chard)
• 5 slices bacon
• 1 tablespoon
raspberry or
cider vinegar
• dry-ingredient
measuring cups
• large bowl
• cutting board
• sharp knife
• Dutch oven or
large saucepan
• spatula
• paper towel
• clean coffee can
• measuring
spoons 7. Sprinkle with bacon pieces and 1
tablespoon vinegar. Serve
immediately.
Methods
1. Wash greens. Remove any tough
stems.
2. Tear greens into medium-sized pieces.
Toss together in bowl.
3. Cut bacon into 1-inch pieces.
4. In Dutch oven or saucepan, cook
bacon until crisp. Place bacon on
paper towel to cool.
5. Pour bacon fat into coffee can. Spoon
2 tablespoons of bacon fat into Dutch
oven or saucepan.
6. Add greens to Dutch oven or
saucepan. Cook over medium heat 6
to 8 minutes or until the greens have
wilted and are tender.
7. Sprinkle with bacon pieces and 1
tablespoon vinegar. Serve
immediately.
Molasses Snow Cones
• 1⁄2 cup dark
molasses
• 1/3 cup firmly
packed sugar
• 41⁄2 cups fresh
snow or
crushed ice (see
note)
• 6 (6- to 7-
ounce) paper
cups
• liquid measuring
cup
• dry-ingredient
measuring cups
• small saucepan
• wooden spoon
• measuring

• cooktop 2. Repeat 3 times; use a total of 36 ice
cubes. Makes about 41⁄2 cups
crushed ice.
Methods:
1. In saucepan, combine 1⁄2 cup
molasses and 1/3 cup brown sugar.
2. Heat over medium-high heat, stirring
frequently, about 2 minutes or until
mixture is smooth and thickened.
Cool slightly.
3. Spoon about 3⁄4 cup snow or crushed
ice into each paper cup. Drizzle 2
tablespoons molasses syrup over
each snow cone.
* To make crushed ice:
1. Place 8 ice cubes in blender. Mix at
low speed. Put crushed ice in bowl.
2. Repeat 3 times; use a total of 36 ice
cubes. Makes about 41⁄2 cups
crushed ice.
Sweet Potato Pie!!
2 medium sweet potatoes baking sheet
3/4 cup firmly packed brown sugar sharp knife
3 eggs medium bowl
3/4 cup half and half potato masher or fork
1 teaspoon cinnamon large bowl
1/2 teaspoon salt dry-ingredient measuring cups
1/2 teaspoon nutmeg liquid measuring cup
1/2 teaspoon ground ginger measuring spoons
1/4 teaspoon cloves electric mixer or hand mixer
1 unbaked 9-inch pie shell aluminum foil
pot holder
Methods:
1. Preheat oven to 350 degrees Fahrenheit.
2. Place sweet potatoes on baking sheet. Bake for about 1 hour. Do not turn off oven
3. Cool sweet potatoes for 10 minutes. Peel by pulling strips of skin away from the flesh with a sharp
knife.
4. Mash potatoes in medium bowl with potato masher or fork.
5. In large bowl or large mixer bowl, combine potatoes, 3/4 cup brown sugar, 3 eggs, 3/4 cup half and
half, 1 teaspoon cinnamon, 1/2 teaspoon salt, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, and 1/4
teaspoon cloves.
6. Beat at medium speed until smooth. Pour into pie shell. Bake for 50 to 55 minutes or until filling is
set and a knife inserted in center comes out clean. If crust edges turn brown before pie is done, use pot
holders to gently place strips of aluminum foil over crust edges and continue baking, as directed.
